Changbai Mountain Tianchi is China's deepest volcanic lake, straddling the border with North Korea. In summer the water is brilliantly blue; in winter it freezes solid. Seeing it takes luck — the ten minutes the clouds part is the most valuable glimpse of the whole trip.
Jilin rime is at its best on Rime Island: the Songhua River's vapour freezes onto bare branches, turning the island into a world of glass. Go at dawn — the moment the sun comes up, the frost begins to fall.
Yanbian cold noodles are the Korean-Chinese signature: buckwheat noodles in icy beef broth with apple slices, egg and chilli paste — one bowl and the summer heat disappears. In Yanji, the noodle shops queue all year round.
Korean-style kimchi is the pickle of every Yanbian household — cabbage rubbed with chilli paste and fermented in cellars, perfect with rice or grilled meat.
